I suppose it all depends if you want to upgrade at a later date, if you run the usual RG6 with power cable your stuck to the old analogue type system camera if you run Cat5e/6 then at least you can either terminate using RJ45 and use a balun which sets you up for an easy swap out to IP/HD cams or terminate with screw type video and power baluns still on cat5e/6 and if you decide to upgrade then you cut the baluns and terminate with RJ45 as normal.
I only run Cat5e now as its easier to run through cavity's/ lofts etc.. and no need to drill a stupid sized hole in the customers wall/eaves etc.
