Only pins 5 work, the other ones don't work. What does that mean ? Is it a broken null modem cable or a serial cable ? Any way I have got to buy a new null modem cable right ?

I found The Difference Between a Null Modem and Straight Through Serial Cable - National Instruments. There is no doubt, it's a Straight Through Cable.
I want to order the following cable: Amazon.com: Tripp Lite 6ft Null Modem Gold Cable DB9F/F (P450-006): Electronics, it should be the wright one. Ok ?

Here i want to ask, did you try OPENPLI 3.0 for DM 800 HD? because the official site till today gives the OPENPLI 2.1

For the moment, I wait for the arrival of a real null modem cable I bought on the web, afterwards I shall try.

Finally I did not yet get a null modem cable, so I tried to make it myself a simple null modem cable like the first image above. I cut my cable in the middle and I joined the 3 cables above. However my cables don't have the same colour as in the picture above. I have:
02 - light brown
03 - red
05 - black

I connected:
02 - 03
03 - 02
05 - 05

I opened the ends of the cable to see the connections, so it should be correct, but it does not work.

if you joined wires correctly no reason not to work

are you using a patched dreamup to connect

I used http://www.dream-multimedia-tv.de/download/DreamUP133_11.zip for all models. On this site, I did not see a specific file to dwonload for DM800 HD PVR. Do I have to use another Dreamup for cloned dreambox?
