Cod balls are a second plate of tasty fish-based crispy cod nuggets from a seasoned chopped parsley and thyme. A recipe for cod lovers that this preparation meet the unmistakable flavour that characterises the salted cod.
You can make 25 pieces.

Ingredients

1 garlic clove, chopped
Flour 150 /200 gr
Cod 750 Gr
Bread crumbs 100 gr
Parmesan cheese 80 gr
Pepper
chopped parsley 1 tuft
some sprig Thyme
salt
3 Eggs

Method

To prepare the balls first desalted the cod well under running water and placing it for two days to soak in cold water and change the water at least twice a day.
Meanwhile, put breadcrumbs in a mixer , shake it and put it in a bowl .
The past two days, well dried salt cod then cut it into small pieces .
Remove the lisps cod from the fillets with the help of tweezers and finely mince with a knife, or put them in the mixer for a few seconds.
In a large bowl place the chopped crumb, parsley, thyme, garlic , cod and finally the grated Parmesan cheese.
Put the Two eggs together then and add salt and pepper. Stir well to mix everything in order to obtain a compact dough.
With his hands formed little balls with the dough and put them on a tray.
Prepare three bowls: one for the flour, one for the breadcrumbs and one put beaten eggs.
Passed then the balls in flour,then in beaten egg and finally in breadcrumbs .
Fry the Meatballs in hot oil . When the meatballs are browned, drain with the help of a skimmer and put all the balls on paper towels so you lose excess oil.
Serve with fresh, lettuce.
