Updating my dm500 server image?

Just had a look at the open pli site and the most recent image are using old framebuffers, ?, should I go for that or use older builds that arn't using old frame buffers ?

They have nightly builds of all variations of the image they are not all using old frame buffer. For DM500 serverrs, lightweight images are better without all the un-needed bloatware.
Use the link to "DM500 Maxvar" images the latest nightly build without oldframe buffer is called "OpenPLi-beta-dm500-maxvar-20120218-244.zip" . I just checked on the PLI site.
With Maxvar just use the built in download panel t install only the extras you need, like softcam etc.. This way you'll conserve memory on the box.
