A delicious recipe to prepare a single dish, with vegetables in season, that comes from the north of Spain, the Basque Country, to be precise.
It 'a simple recipe, but rich in taste, especially because long cooking provides. You can accompany with white rice.

Serve 4

Ingredients:

1 chicken in pieces
5 red tomatoes
2 yellow peppers and red
1 slice of white lard
2 handfuls of button mushrooms
1 glass of white wine to evaporate
2 cloves of garlic
1 or 2 large onions
extra virgin olive oil
salt and pepper to taste
spices to taste (bay leaf, rosemary, pepper)


Method:

Wash the chicken pieces. Sprinkle with salt, a pinch of pepper and spices and place them in a dish to marinate.
Wash all vegetables. Cut the peppers into strips, removing
well the seeds. Sliced ​​tomatoes and sliced ​​mushrooms.
Slice the onion.
In a saucepan or in a large frying pan Heat a few tablespoons of oil. When hot add all the pieces of chicken at
high heat. Sauté the chicken well on both sides. When golden, turn down the heat and cook for 10 minutes.
Remove from heat and transfer the chicken pieces in another saucepan and keep aside covered.
In the same pan where you have very little oil, add chicken, golden (if necessary) and whole garlic cloves.
Let brown slightly then add the peppers, then onions, then tomatoes, mushrooms in the Most Recent.
Cook 2 / 3 minutes then add the chicken well.
United also the bacon into strips and cook over a low heat by covering with a lid.
Turn occasionally and cook at least 1 hour.
When the sauce will be quite withdrawn mix together with a glass of wine, raise the heat to evaporate.
Combine a handful of fresh herbs. Season with salt.
