Phone Unlocking DEbranding an unlocked mobile

ladies & Gents,

I need a litle help, I have removed the simlock from my wifes Sony Ericsson Jalou (F100i) but the infuriating 02 software still haunts the UI. If I upgrade the software using the sony update service will it re-lock the phone? If so how can I debrand it / flash a generic firmware to it and what version should I use?
