Chicken with cashews

Chicken with cashews is a Thai recipe,Despite being very simple to achieve needs the balance of each ingredient to make a dish that is truly remarkable. Followed the recipe to the letter, this chicken with basmati rice and you will lick the fingers.

Serve 4

Ingredients:
400 g chicken breast
140 g cashews
1 teaspoon filled with grated ginger root
2 spring onions
100 ml of vegetable stock
3 tablespoons soy sauce
2 tablespoons cornstarch
1 teaspoon fish sauce (nam pla)
4 tablespoons peanut oil
1 sprig of coriander

Method:
Prepare a sauce by mixing the soup with soy sauce, fish sauce and cornstarch.
In a wok or a large pan, add the peanut oil and roast for a minute the cashews. Raised the cashews and keep them aside.
In the same wok or pan, stir-fry the onions sliced and grated ginger together.
Add chicken cut into pieces and fry along with spring onions and ginger for a few minutes.
Add the sauce and toasted cashews and chicken cook the mixing gently with a wooden spoon until the sauce will be tick and when your chicken with cashews will be ready.
Serve the chicken with cashews decorating dishes with fresh coriander and spring onions.
