100C slow (cuts out at 95) and 105C fast (cuts out at 100) Its a two stage fan mate

Have you checked the engine breather that can cause all sorts of problems. Let your car tick over and pull the dipstick out does it pop? and give a lot of smoke out of the dipstick housing?.

Pressure cap could be faulty
Changed quite a few of these

Pressure cap , thermostat or worst ,cylinder head gasket.

After driving for a while, i parked up my car. Once the it had all cooled down, i opened the coolant expansion tank and air and some coolant came out of the hole facing the windscreen. Ive done this several times now and its the same each time, is this normal or do i have a serious problem???

you may have too much pression in tank coolant
check the thermostat. it may open at 90celcius
check the fan coolant if working
