An easy recipe with a special flavor , a variation for cooking the pork Fillet. Easy to make, nice to taste.

Serve 4

Ingredients

• 800 grams of pork fillet
• 200 g blanched almonds
• 1 cup sweet white wine
• 10 g sugar
• 1 packet of saffron
• 1 untreated lemon
• Cloves
• 1 / 2 cinnamon stick
• extra virgin olive oil
• salt
• Pepper

Method:

Cut the pork into cubes about 3 cm per side, then put in a bowl, pour the wine and leave to marinate the meat for about 30 minutes.
Drain well, then melt the sugar in the wine and saffron.
Pour 4 tablespoons of oil in a large skillet, bring to high heat and brown the meat, stirring often.
Once the meat has taken a light color, add 1 tablespoon grated lemon rind, cloves and cinnamon, both chopped.
Take a short season, then add the wine from the marinade and let it evaporate.
Reduce heat, add the almonds and continue cooking for about 15 minutes, stirring often, at the end with salt and pepper.
Turn off the heat, let stand the meat in the pan for a few minutes and serve hot.
Serve with any vegetable or to feel rich, potatoes.
