The savoury muffin with ham and peas are original and delicious snacks, savoury pies soft, suitable to be served as an appetizer or to prepare for a trip out the door. This is the most common savoury muffin cakes, which in this case are enriched with diced prosciutto cotto, peas and grated cheese.
The recipe is simple to prepare and can be made even in mini version!

Ingredients for 12 muffins or 10/36 mini muffin:

200 g flour,
100 ml Milk
yeast powder for 10 g

Savory preparations:

extra-virgin olive oil, 2 tablespoons
vegetable oil 100 ml
grated Parmigiano Reggiano, or Grana.
40 gr grated Pecorino cheese,
60 gr pepper Peas
200 g parsley (or chives),
1 sprig
100 gr diced cooked ham,
salt
3 Eggs

Method:

Start cooking the peas in a little olive oil ,add salt at the end of cooking; the peas must be cooked but still pretty crunchy.
In a nonstick frying pan lightly sauté the ham cubes .
In a bowl beat the eggs and add the 3 milk and seeds oil.
Incorporate also the chopped parsley (or, if you prefer, chives).
In a large bowl sift the flour with the baking powder, add the mixture of eggs, oil and milk and stir well to mix everything .
Then add grated cheeses , peas and diced ham cooked .
Lightly salt and pepper to taste.
Stir the mixture being careful not to crush the peas.
Using a sac à poche or a spoon, place the mixture in muffin tins (or mini muffin) covered with paper cups, filled to the brim .
Bake the muffins with peas and ham at 180° C (fan oven) for about 20-25 minutes.
Serve warm or cold!
