Serve 4

Ingredients
1 rabbit,
1 large onion,
500 grams of potatoes,
a handful of celery,
400 g tomatoes,
1 cup and a half of vinegar,
3 tablespoons sugar,
2 cups water,
2 or 3 pears, cut into wedges with the peel,
a handful of green olives

Method

Sauté the rabbit pieces in a frying pan after it is washed and dried. Place in a pot.
In the same pan (add oil if necessary) to brown the potatoes, cut into wedges and arrange on top of the rabbit in the pot.
In the same pan, sauté the onion and then add the celery, chopped tomatoes, olives, pears, add water, vinegar and sugar and, after a few wild oats, pour it on the rabbit.
Simmer until cooked. It may also make capers.
Serve warm, but it is also good cold.
