OS Help with WHS11 setup

Gosh feels like forever since iv posted in this section! So I bought a HP Microserver over a year ago and finally got a chance to do anything with it. Installed WHS11 and done all windows update!

Drive 0 = O/S Seagate 250gb HDD (stock)
Drive 1 = WD RED 4TB drive
Drive 2 = Seagate 3TB Drive
Drive 3 = Seagate 3TB Drive

Now the PC I am using is connected to the server over the network but I cant figure out how to select the files/folders to back up. I can load WHS11 Dashboard but what next? Any advice on how I should format the above drives? Any other tips? Videos? Add ins?

I'd recommend drivebender.
This lumps all of your drives into one available disc as a software raid.
No need to worry about folders getting larger than one drive then.
Also allows for duplication.
And then serviio for sharing content to connected devices and subsonic for audio on the go.
