A dish that is a mixture of various vegetables cooked in a pan. each region or Country,has its own name for this preparation and everyone puts a little what is at hand. This is my version.

Serve 4

Ingredients
1 onion,
2 eggplant,
celery,
2 carrots,
1 yellow bell pepper,
3 Zucchini,
6 cherry tomatoes,
basil,
salt,
pepper,

Method

In a large frying pan, stir-fry the coarsely chopped onion, celery and a bit of chilli in plenty of extra virgin olive oil.
Once golden the onions, add the diced Eggplant without peeling them
After a few minutes, then add the diced carrot
After about 5 minutes add yellow peppers previously emptied and cut into strips
Finally after a few minutes the zucchini diced without peeling them and immediately after the tomato chunks.
Is a vegetable stew, add half a glass of water if it starts to dry up.
Add salt, cook at moderate heat with the lid on, until all the vegetables are cooked.
At the end, garnish with parsley or basil.
