Have stumbled across this 10 part show on Cinemax and it is fantastic. Has been renewed for a second season.

It's based on the concept of Bruce Lee's writings, and as it's Cinemax it's full tits & arses, violence, and great drama

Seriously, the WIng Chun in it alone is enough but its production overal is a real hook.

Set during the Tong Wars in late 1870s San Francisco, California, the series follows Ah Sahm, a martial arts prodigy who immigrates to San Francisco from China and becomes a hatchet man for the most powerful tong in Chinatown.

So far there are also 8 shorts that go along with the series where they discuss with cast and crew, including Bruce Lee's daughter Shannon who was one of the executive producers.

Good call on this show VectorZ. I have watched the 8 episodes so far and thoroughly enjoyed them.
