Network Provider I Phone question....

After a recent trip to the USA the missus decided she wanted an Iphone.....got 1....came on the forum and with the guys help unlocked with Ziphone...all OK ! Missus tried the phone for about 2 days ... then I noticed it on the side.....and her sim was back in her old phone.... she can't get away with it....
My question is using Ziphone can u reset the phone easily ? get rid of all her info off it so I can sell it ? Wots the best , quickest method of removing all the apps and getting it back to orig state ?
