Extra lean mince burgers - make them tasty?

I'm stuck... need to make extra lean mince burgers tasty and not dry. Threw garlic, pepper and onions at them a few days ago, but they just tasted like dry mince tbh! Was trying to avoid salt, what's my options for making a healthy(ish lol!!!) burger but has a real burger taste ????

I'd have the 'full fat' version all day long, but as always, the Mrs insists on a healthier alternative :(

I use Quorn in a lot of mince recipes and give it a bit more taste with tomato purée and/or port.
 
Lean=less fat=tastless and dry. Not much you can do about it.

Healthy living has it's downsides unfortunately. :(
 
I read somewhere that unless you use 15% fat or above you'll end up with a ball of mince. I've been making mine with 10% (which used to be called lean and 5% was extra lean I think) but adding garlic mayo, English mustard and a bit olive oil.

Might be a bit much for some but they are definitely not dry and don't taste greasy, even with that much mustard you can't really taste it. I do cook them thoroughly though, turning them a good few times without squashing.

I have one left in the fridge as it happens :).

Makes four:


  • 450g 10% mince
  • 50g garlic mayonnaise
  • 25g English mustard
  • 10g EVOO
 
agree that you need a handful of breadcrumbs, but it also helps to add an egg as it will bind the other ingredients
