Chicken with coconut milk and curry

Thailand, all the time I'm thinking to this fascinating Country, jump in my mind some special recipes, this one,chicken pieces cooked in coconut milk and curry is one of the tasty, and delicate, suitable for any one, so try it!!

Serve 4

Ingredients:
800 g chunks of chicken,
1 can of coconut milk
1 tablespoon of curry
1 shallot
1 piece of ginger
flour 2 tablespoons
vegetable oil
1 tablespoon of Nam Pla (fish sauce)

Method:

Put the chicken pieces in a bowl and cover them with coconut milk.
flavour the chicken pieces for at least half an hour in the coconut milk and after pass them in flour.
Add a spoon of curry in the coconut milk and keep it aside.
In a wok or pan, fry the chopped scallions in oil together with a piece of ginger.
Soon the shallots will start to cook ( light gold color ) took of the ginger and sauté the floured chicken pieces.
Once the chicken is cooked, salt it with fish sauce and add the coconut milk curry.
Cook on full fire for few minutes.
As soon as the coconut milk is thickened, serve the chicken with coconut milk and curry with rice boiled in salted water.
