This is a delicious pasta recipe, ideal for who doesn't have too much time to spend in the kitchen, and very, very tasty.
Serve for 4 people
Ingredients:
• 350 g spaghetti
• 100 g bacon or pancetta ( italian pork bacon..)
• 1 clove of garlic
• 2 eggs
• 70 g of grated Pecorino Romano (Strong Italian Cheese )
• 1 bunch of parsley
• extra virgin olive oil
• salt
• peppercorns ( black pepper )
Method:
Bring plenty of water to a boil in a pot, add some salt.
Meanwhile cut the bacon into strips and pour into a large pan with a little olive oil and garlic, peeled and crushed.
Fry the bacon until it will be well browned, then remove the garlic.
When the water for the pasta begins to boil, cook the spaghetti until al dente.
Beat eggs in a bowl with a pinch of salt and a little cheese, then proceeds with plenty of perfumed freshly ground pepper.
When the pasta is cooked, drain it, transfer it into the pan with the bacon and let it jump slightly, then lower the heat and add the beaten eggs.
Mix together for a few seconds, then remove from heat.
Pour the dough in a bowl topped or directly in individual plates, add the parsley, cleaned, washed and chopped, garnish with remaining cheese, stir and serve immediately.
