HELP - Transferring from Iphone 4s to 5s ? Back up etc ??

Hi All

I finally got a 5s and am looking to update from my old 4s.

It is unlocked factory reset and i currently just have a 3 PAYG sim in it and it works fine (i did not not set up any accounts etc)

It gave me the option to recover (or something similar) from icloud BUT whenever i check my iclous on my laptop the NOTES never match my phone, some recent ones are there but loads of other missing even tough i did a manual back up earlier they are still not showing ?

I plan on installing itunes, doing a backup from there then using that option.

Can i do this now before i get my new sim ?

Or shall i wait until new sim comes, reset the 5s and go from there ??

I think you will be ok without the sim but it may ask you to insert one but any old sim will do.
