First course easy to prepare, this dish is a delicacy typical of traditional Roman cuisine.
Spaghetti alla carbonara is a dish with rustic and authentic ingredients but this doesn't make them less tasty for delight the palate. This is a first meal ,rather robust, I therefore recommend to eat as a real first course.
Where have originated the name Carbonara is not all clear , it is assumed to be due to charcoal people, or those that produced coal in the woods and they could always trow in the bag, a little bit bacon, egg and a piece of cheese to eat it in the middle of the forest.

Ingredients for 4 people:

* 400 grams of spaghetti or penne ( short pasta)
* Gr. 150 of bacon
* Gr. 30 of Pecorino Romano Cheese
* 3 eggs
* White Wine
* Salt and black pepper

Method:
Cook in a pan over low heat the fresh bacon cut into cubes in a little olive oil, refresh with a splash of wine.
In a separate bowl beat the eggs with plenty of black pepper, just a pinch of salt and pecorino romano cheese . Cook pasta al dente, than drain it and set aside a bit of the pasta cooking water.
Add the pasta to the mixture in the pan and, strictly off the heat, add the beaten eggs with two tablespoons of pasta cooking water. the heat of the pasta water will be enough to cook eggs. Mix well and serve immediately with a sprinkling of pecorino romano cheese.

Never miss close to a plate of spaghetti alla carbonara an appropriate glass of wine .
